All salt comes from the sea. Sea salt is evaporated from liquid ocean water while mined salt is taken from ancient deposits left by long-dry seas. The supertasters among us may detect subtle differences between salts, but salt is mostly differentiated by texture and color. Try coarse Mediterranean sea salt for a large grain salt. For flakes, try kosher or Maldon. Our most delicate flake salts are Saltcream and Fleur de Sel. Our Hawaiian salts come in red and black.
